Low Carbohydrate Diet

Lamb Patties use ground lamb meat mixed with seasoned salt and lemon juice and are then grilled or broiled. Garnish with chopped mint leaves, if desired.

Ingredients

1-1/4 pound ground lamb
1 teaspoon seasoned salt
1 tablespoon lemon juice
3/4 teaspoon mint leaves, chopped

Recipe Directions

Prepare grill or turn on broiler.

Combine all ingredients in a bowl. Shape into 4 patties. Grill or broil 4 to 5 minutes per side until just cooked throughout.

Bonus: Chicken Patties

These had a great crunchy outside, and since the chicken was cooked, you need not worry about making sure they are done inside.

Chicken Breast 2 chicken breasts, shredded
1/4 cup pork rind crumbs
1/3 cup mayonnaise
1/4 cup onions, chopped
1 tablespoon lemon juice

Mix ingredients and form into patties (makes 5). Heat oil in pan, then coat each pattie with crushed pork rinds. Cook until outside crisp, turn and cook until other side crisp.

Nutrition information: Serves 2 at 2 carbs, 0 fiber, 417 cal, 34 fat, 29 protein. Counts are without the oil for frying.
