Fishing Lodge Breakfast Trout with a mixture of brown sugar and salt brought to near-burn stage. Then a little butter is added with the trout. The trout should cook in 5 to 10 minutes.
2 tablespoons brown sugar
1 teaspoon salt
2 tablespoons unsalted butter
4 whole dressed trout, heads removed if desired
Place sugar and salt to taste in a covered heavy cast-iron skillet over medium heat.
Cook 3 to 4 minutes, or until it begins to burn.
Add butter and trout and reduce heat to low. Cover and cook 5-10 minutes per side, or until fish flakes easily.
