Pizza Soup with Dried Basil Low Carbohydrate Recipe
1 tablespoons vegetable oil
1 onion, finely chopped
1/2 cup mushrooms, sliced
1/4 cup green bell pepper, thinly sliced
1 cup canned tomatoes, undrained
1 cup water
1 teaspoon beef bouillon
3 ounces pepperoni, thinly sliced
1/2 teaspoon dried basil
1 cup shredded mozzarella cheese
Yield: 4 Servings

Directions:
Turn on broiler. Heat oil in a heavy nonstick skillet over medium high heat.
Saute next 3 ingredients 3 to 4 minutes in skillet until softened. Add next 5 ingredients and cook just until heated through.
Ladle soup into ovenproof bowls and sprinkle with cheese. Broil 1-2 minutes until cheese is bubbly.
