Mashed Not-Potatoes
|
Directions:
Steam the cauliflower till well-cooked. Add 2-3-tablespoons of butter to the cauliflower and mash.
Note: If you like the cauliflower mixture a little chunky, use a potato-masher or mixer. If you like it very smooth, use a stem or wand-type mixer.
Add cream, a tablespoon at a time to the cauliflower mixture, until desired consistency. Salt and pepper to taste.
Variation:
Twice-baked not-potato casserole:
Add grated cheddar cheese, crumbled bacon (optional), a beaten egg or some sour cream, and put in a casserole dish. You can top with more grated cheese, if desired. Broil until top is browned.
