Mashed Not-Potatoes

Low Carb Recipe

By

Instead of carb laden potatoes, try this recipe for mashed potato like side dish using cauliflower. It's easy with a little butter, sour cream and salt and pepper to taste.

Steaming and microwaving cauliflower will better preserve its vitamin content, especially the B vitamins, than if it is boiled.

Low Carb Diet

Recipe Ingredients

1 head cauliflower, trimmed, washed and cut into chunks
3 tablespoons butter
3 tablespoons cream or sour cream
Salt and black pepper, to taste

Recipe makes enough to serve four.

Recipe Directions

Cauliflower Steam the cauliflower until well-cooked. Add 2 to 3-tablespoons of butter to the cauliflower and mash.

Note:  If you like the cauliflower mixture a little chunky, use a potato-masher or mixer. If you like it very smooth, use a stem or wand-type mixer.

Add cream, a tablespoon at a time to the cauliflower mixture, until desired consistency. Salt and pepper to taste.

Variation: Twice-Baked Not-Potato Casserole

Add grated cheddar cheese, bacon bits (optional), a beaten egg or some sour cream, and put in a casserole dish. You can top with more grated cheese, if desired. Broil until top is browned.
