Mushrooms With Garlic and Parsley

Use a mixed variety of mushrooms and add garlic, lemon juice, salt and pepper and parsley. Healthy, tasty and low in carbs - what more can you ask for?

Mushrooms are good sources of three hard-working B-complex vitamins -- riboflavin, niacin and pantothenic acid. They are all found in every cell in our body, helping release energy from the fat, protein and carbohydrate in our food. In addition, Riboflavin promotes healthy skin and good vision.

Recipe Ingredients

1 pound mixed varieties fresh mushrooms
5 tablespoons olive oil
3 cloves garlic, peeled and thinly sliced
1 tablespoon lemon juice
Salt and freshly ground black pepper
3 tablespoons parsley, finely chopped

Recipe makes enough to serve six.

Recipe Directions

Mushrooms

Wash the mushrooms only if they are wild. Otherwise, wipe over the mushrooms with a slightly moistened cloth. Trim the stems and leave the mushrooms whole or, if large, slice them thickly.

Heat the oil in a large frying pan. Add the mushrooms and the garlic and cook over a high heat for about five minutes, until lightly browned. Stir often and do not allow the garlic to burn.

Add the lemon juice and salt and pepper to taste. Transfer to a warmed dish and sprinkle with parsley. Serve hot or at room temperature.
