Garlic Cauliflower

Cauliflower is great for a low carb diet, but is often bland. Not with this recipe! Garlic, paprika, red wine vinegar, cayenne pepper and salt and pepper give it lots of flavor and nutrition.
There are two main ingredients in cauliflower, and all of the cruciferous family, that are the main disease fighters. These are indole-3-carbinol, or 13C, and the photonutrient sulforaphane. Cauliflower also contains vitamin C and folate.

Recipe Ingredients
1 large cauliflower separated into florets
6 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon paprika
1 tablespoon red wine vinegar
1/8 teaspoon cayenne pepper
Salt and black pepper, to taste
Recipe Directions
Break the cauliflower up into florets. Steam the cauliflower in the microwave or boil in enough until tender, about 8 to 10 minutes, depending upon the strength of your microwave. Drain the cauliflower and place it in serving bowl.
While the cauliflower is cooking, heat the olive oil in a small skillet and saute the garlic over medium heat for 1 minute. Remove from the heat and add remaining ingredients, stirring to mix well. Pour over the cauliflower, too to coat and serve immediately.
