Low Carbohydrate Diet
Cauliflower is great for a low carb diet, but is often bland. Not with this Garlic Cauliflower recipe! Garlic, paprika, red wine vinegar, cayenne pepper and salt and pepper give it lots of flavor and nutrition.
1 large cauliflower separated into florets
6 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon paprika
1 tablespoon red wine vinegar
1/8 teaspoon cayenne pepper
Salt and black pepper, to taste
Break the cauliflower up into florets. Steam the cauliflower in the microwave or boil in enough until tender, about 8 to 10 minutes, depending upon the strength of your microwave. Drain the cauliflower and place it in serving bowl.
While the cauliflower is cooking, heat the olive oil in a small skillet and saute the garlic over medium heat for 1 minute. Remove from the heat and add remaining ingredients, stirring to mix well. Pour over the cauliflower, too to coat and serve immediately.
