Mashed Not-PotatoesIngredients:1 head cauliflower, trimmed, washed and cut into chunks 3 tablespoons butter 3 tablespoons cream or sour cream Salt and pepper, to taste Directions: Steam the cauliflower till well-cooked. Add 2-3-tablespoons of butter and mash. If you like it a little chunky, use a potato-masher or mixer. If you like it very smooth, use a stem/wand-type mixer. Add cream, a tablespoon at a time, until desired consistency. Salt and pepper to taste. Variation: Twice-baked not-potato casserole: Add grated cheddar cheese, crumbled bacon (optional), a beaten egg or some sour cream, and put in a casserole dish. You can top with more grated cheese. Broil until top is browned.
