Peanut Butter-Chocolate Slime Fruit DunkersHappy Halloween!

A delicious, Peanut Butter-Chocolate Slime Fruit Dunkers dip made with low fat chocolate milk, creamy peanut butter, cocoa powder and ricotta cheese to dip your choice of fruit variations into for a very healthy Halloween snack.

Chocolate Pudding in Peanut Butter-Chocolate Slime Fruit Dunkers

Recipe Ingredients

2 tablespoons cornstarch
1 tablespoon granulated sugar
1 tablespoon unsweetened cocoa powder
1/8 teaspoon salt
1-1/3 cup 1 percent lowfat chocolate milk
2 tablespoons creamy peanut butter
1/4 teaspoon vanilla extract
3 tablespoons lowfat ricotta cheese

Recipe Directions

Stir together cornstarch, sugar, cocoa and salt in small heavy saucepan. Stir in chocolate milk using a wire whisk.

Cook and stir mixture over medium-high heat until slightly bubbly. Reduce heat to medium-low; continue cooking and stirring about 1 minute or until slightly thickened. Remove from heat. Stir in peanut butter and vanilla until peanut butter is melted.

Transfer pudding mixture to small glass bowl; cover surface with plastic wrap. Refrigerate for 2 to 4 hours or until chilled.

To serve, gently stir ricotta cheese into pudding mixture. Spoon mixture into individual dishes or Halloween pots. Serve with banana chunks, apple slices, other fruit or even pretzels.

Fruit Variations

  1. One medium banana, peeled and cut into chunks
  2. Two medium apples, cored and thinly sliced
