Creatures from the Lagoon
Happy Healthy Holidays!
Tapioca pudding with chocolate milk, vanilla and cinnamon served in hollowed out miniature pumpkins.
3 cups reduced fat chocolate milk
3 tablespoons tapioca
2 tablespoons sugar
1 egg, beaten
1 teaspoon vanilla
Mix milk, tapioca, sugar and egg in medium saucepan; let stand 5 minutes.
Cook on medium heat, stirring constantly, until mixture comes to a full boil. Remove from heat.
Stir in vanilla and cinnamon. Pudding will thicken as it cools. Cool at least 20 minutes before serving.
Can be served warm or cool. To keep pudding creamy while cooling, place plastic wrap on the surface of the pudding.
Serve in hollowed out miniature pumpkins with gummy worms "crawling" out.
