Rice Krispie Easter Eggs
Happy Healthy Holidays!
These are sweet and crunchy but very low in fat and packed with protein due to the addition of crunchy peanut butter. Mold into eggs and dip in chocolate. Great Easter treat!
1 cup sugar
1 cup crunchy peanut butter
2 cups Rice krispies
2 tablespoons vegetable oil
1/4 teaspoon vanilla
Chocolate Coating (see below)
Mix all ingredients together and mold into eggs. Place on cookie sheet and freeze about 2 hours.
Dip Rice Krispie Easter Eggs in chocolate coating and cool on waxed paper.
1-1/2 cups semi-sweet chocolate morsels or milk chocolate morsels
5 teaspoons shortening
Multi-colored sprinkles (optional)
In a small saucepan combine chocolate morsels and shortening. Cook over low heat until melted, stirring constantly.
Dip cereal eggs into chocolate. Decorate with sprinkles if desired.
