Green Enchiladas Healthy Holiday Recipe
Ingredients:
Six corn tortillas
Green onions, chopped
one, 4-ounce can diced green chilies
1/2 cup Monterey Jack cheese, shredded
One 19-ounce can green Chile enchilada sauce
1-1/2 cup cooked chicken, shredded

Directions:
Heat 1-tablespoon oil in skillet over medium heat. Fry tortillas quickly on both sides. Drain on paper towel and keep warm.
Prepare filling:
Heat 2-tablespoons oil in saucepan. Add chicken and saute. Coat tortilla with sauce.
Place 1/4-cup of the chicken on the tortilla and roll. Place seam side down in casserole dish. Sprinkle shredded cheese evenly over enchiladas.
Heat in 350-degree oven for ten minutes. Remove from oven and pour remaining sauce over hot enchiladas.
Top with diced green chilies, sour cream and chopped onions.
Recipe makes three to four Green Enchiladas.
