Green Enchiladas
Healthy St. Patrick's Day Recipe

Corn tortillas filled with green onions, green chilies, Monterey Jack cheese, green Chile enchilada sauce and cooked chicken.
Recipe Ingredients
6 corn tortillas
Green onions, chopped
1 4-ounce can diced green chilies
1/2 cup Monterey Jack cheese, shredded
One 19 ounce can green Chile enchilada sauce
1-1/2 cup cooked chicken, shredded
Recipe Directions
Heat 1-tablespoon oil in skillet over medium heat. Fry tortillas quickly on both sides. Drain on paper towel and keep warm.
Prepare filling: Heat 2-tablespoons oil in saucepan. Add chicken and saute. Coat tortilla with sauce.
Place 1/4-cup of the chicken on the tortilla and roll. Place seam side down in casserole dish. Sprinkle shredded cheese evenly over enchiladas.
Heat in 350-degree oven for ten minutes. Remove from oven and pour remaining sauce over hot enchiladas.
Top with diced green chilies, sour cream and chopped onions.
Recipe makes 3 to 4 servings Green Enchiladas.
