Ham and Black Bean Burritos

Happy Healthy Holidays!

Make use of leftover Christmas ham and some healthful black beans - make these no-bake ham and black bean burritos. They're a snap to make. If you prefer meatless, try the quick recipe below instead.

Ham for Ham and Black Bean Burritos

Recipe Ingredients

1 cup cooked lean ham, diced
1 cup canned black refried beans
1 cup canned black beans, rinsed and drained
4 medium fat free flour tortillas, warmed (See Warming Tortillas)
1/2 cup fat free black bean dip*
2 tablespoons cilantro, fresh, chopped
1/4 cup low fat shredded cheddar cheese, or low-fat Monterey Jack
2 medium scallions, chopped

Recipe Directions

Coat a nonstick skillet with cooking spray and place over high heat.

Add ham and saute until browned and crispy on edges, about 3 minutes.

Reduce heat to medium-low, stir in both beans and cook until hot, about 3 minutes.

Lay a tortilla on a dinner plate.

Top with 1/2 cup of beans, 2 tablespoons of dip, 1/2 tablespoon of cilantro, 1 tablespoon of cheese and 1/4 of scallions. Fold in sides, roll up and repeat.

Recipe makes 4 servings.

Quick Meatless Burrito Bake

Place frozen burritos in baking dish and microwave according to package directions. Top with canned reduced-sodium enchilada sauce and reduced-fat shredded Cheddar cheese. Microwave uncovered, on medium power until cheese melts. Top with shredded lettuce and chopped tomatoes. If you like things a bit hotter, add sliced jalapeno peppers!
