Ham and Black Bean Burritos

Make use of leftover Christmas ham with no-bake "burritos." They're a snap to make.
Recipe Ingredients
1 cup cooked lean ham, diced
1 cup canned black refried beans
1 cup canned black beans, rinsed and drained
4 medium fat free flour tortillas, warmed (See Warming Tortillas)
1/2 cup fat free black bean dip
2 tablespoons cilantro, fresh, chopped
1/4 cup low fat shredded cheddar cheese, or low-fat Monterey Jack
2 medium scallions, chopped
Recipe Directions
Coat a nonstick skillet with cooking spray and place over high heat.
Add ham and saute until browned and crispy on edges, about 3 minutes.
Reduce heat to medium-low, stir in both beans and cook until hot, about 3 minutes.
Lay a tortilla on a dinner plate.
Top with 1/2 cup of beans, 2 tablespoons of dip, 1/2 tablespoon of cilantro, 1 tablespoon of cheese and 1/4 of scallions. Fold in sides, roll up and repeat.
Recipe makes 4 servings.
