1. Holiday Delight

1/2 cup of orange juice
1/4 cup of frozen strawberries
1/4 cup of cranapple juice
1/4 cup of half and half
1/2 a banana

Recipe Directions

Blend all ingredients in a mixer; pour into a tall glass.

2. Southern Style Eggnog

Christmas Cookies

4 eggs, separated
1/2 cup sugar
1/4 teaspoon salt
3 cups milk
1 cup whipping cream
2 teaspoons vanilla extract
Nutmeg and whipped cream for garnish

Beat the egg yolks gradually and add sugar and salt. Stir in milk and cream gradually. Cool mixture over hot water or over low heat, stirring constantly, until it thickens and coats a metal spoon. Cool. Add vanilla extract and chill thoroughly. Beat egg whites until soft peak forms; gradually add remaining 1/4-cup sugar. Beat the refrigerated mixture until smooth and frothy. Fold in beaten egg whites. Sprinkle with nutmeg and garnish with whipped cream.

3. Hot Spiced Apple Cider

Hot Spiced Apple Cider 6 to 8 cups apple cider
1/4 cup orange, lemon, or lime slices with peel
or any combination of the three
1 two inch stick of cinnamon
4 to 6 cloves

Heat above ingredients in a glass pot or enameled pan. Serve with fruit slices in mugs. Recipe makes six to eight servings.

4. Lemon-Strawberry Punch

1 can (6 oz.) frozen orange juice concentrate, thawed
1 package of frozen sliced strawberries
1 can (6 oz.) frozen lemonade concentrate
1 quart carbonated water
1 quart ginger ale
Sliced bananas (garnish)
Sliced oranges or lemons (garnish)

Combine frozen lemonade, the strawberries (half -thawed with juice), and the orange juice. Place in a punchbowl with ice. Just before serving, add carbonated water and ginger ale. Garnish with thin slices of orange or lemon. Serves 20

5. Frosty Mocha

Frosty Mocha 1/2 gallon chocolate ice cream, softened
8 cups coffee, chilled
1 pint half-and-half
1 teaspoon almond extract
1/8 teaspoon salt
1 square semi-sweet chocolate, grated
1/4 teaspoon ground cinnamon

With mixer at low speed, beat ice cream and 3 cups coffee until smooth. In chilled five to six-quart punch bowl, stir ice cream mixture, half-and-half, almond extract, salt and 5 cups of coffee until blended. Sprinkle top of punch with grated chocolate and cinnamon. Recipe makes 16, 8-ounce servings.

6. South Sea Cooler

3 ounces orange juice
1/2 ounce undiluted grapefruit juice concentrate
1 ounce of coconut cream
1 ounce of light cream

Shake with large scoop of shaved ice. Serve in tall glasses.

7. Mai-Tai

1/2 cup pineapple juice
1/4 cup orange juice
1/4 cup club soda
1 tablespoon cream of coconut
1 tablespoon grenadine syrup

In shaker or tall glass, combine ingredients; shake or stir to blend. Add crushed ice.

8. The C & C Express

In a blender, mix on low speed to smooth consistency the following ingredients:
6 ounces of low fat chocolate chip ice cream
1/4 cup of brewed espresso coffee
1/4 cup of half and half
3 tablespoons of cream of coconut

Pour into an 8-ounce serving glass. Top with whipped cream and chocolate shavings. Garnish with a cookie and serve immediately.

9. Hot Apple Buttered Rum-less

3/4 cup packed brown sugar
1/2 cup margarine or butter
1/4 teaspoon finely shredded lemon peel
1/4 teaspoon ground cinnamon
1/4 teaspoon allspice
5 cups cider or apple juice
10 teaspoons rum extract

For butter mixture, mix brown sugar, butter, lemon peel, cinnamon and allspice in a small mixing bowl until well combined. You can use this immediately or store it in the refrigerator up to one month. For each serving, place one rounded tablespoon of butter mixture in coffee mug. Bring cider or juice to a boil, then pour into mugs. Add 1-teaspoon rum extract to each. Stir well. Recipe makes ten servings.

10. Topical Winter Warmer

1 quart apple cider or juice
1 to 1-1/4-cup packed brown sugar
1 cinnamon stick, 3-inches
12 whole cloves
2 cups grapefruit juice
2 cups orange juice

In a large saucepan, combine cider and brown sugar. Cook and stir over medium heat until sugar dissolves. Add cinnamon and cloves; bring to a boil. Reduce heat and simmer, uncovered, five minutes. Add grapefruit and orange juices. Heat through, but do not boil. Discard cinnamon and cloves before serving. Recipe makes two quarts.

11. Pink Champagne

1 ounce cranberry-apple juice, chilled
1 ounce apple juice, chilled
2-1/2 ounces cold ginger-ale

Pour juices into mixing glass and stir well. Add ginger ale and stir briefly. Pour into champagne flute and serve immediately.

12. Christmas Cheer

4 cups apple juice
3 cups pineapple juice
2 cups cranberry juice
One medium lemon, peeled*
One cinnamon stick
1/4 teaspoon ground nutmeg

In a large pot, combine apple juice, pineapple juice, cranberry juice, lemon peel, cinnamon stick and nutmeg. Bring to a boil, reduce heat and simmer for 10 minutes. Strain and serve warm. *Peel lemon with a vegetable peeler, making sure not to get any of the pith (white part). Save fruit for another use. Cut peel into 1/2 inch slices. Servings: 12

13. Non Alcoholic Minted Punch

5 cups water
6 whole cloves
1 cinnamon stick, three to four inches long
1 tablespoon minced fresh ginger root
1/2 cup chopped fresh mint leaves and additional
whole mint leaves for garnish
1/2 cup sugar
One lemon cut in half

In a large saucepan over medium heat, stir the water, cloves, cinnamon stick, ginger and mint. Bring the mixture to a boil, reduce the heat to medium and simmer, uncovered, until the liquid is reduced to four cups, about 15 minutes. Add the sugar and stir until dissolved. Remove from the heat. Squeeze the juice from half of the lemon into the punch and mix well. Strain the punch into a chilled pitcher or punch bowl; discard the solids. Thinly slice the other lemon half and add it to the punch. Serve the punch warm, or cover it tightly and chill for at least two hours or as long as overnight. recipe makes8 servings, 4-ounces each.

14. Non-Alcoholic Sweet Passion Punch

1 ounce pineapple juice
1 ounce orange juice
1 ounce cranberry juice
1 ounce strawberry daiquiri mix
1 ounce pina colada mix
Dash of grenadine
Dash of lime juice
1/2 cup ice

Blend all ingredients with ice, pour into a daiquiri glass. Garnish with whipped cream, two cherries and a little grenadine. Recipe makes one serving.

15. Sherbet Punch

1 quart of sherbet (your choice)
1 quart of soda (your choice)

Mix sherbet and soda together in a punch bowl and add fruited ice ring.

Substitutions for Alcohol in Recipes

Christmas Elf

For 1-tablespoon sweet sherry, use 1-tablespoon apple cider.
For 1-tablespoon dry vermouth, use 1-tablespoon apple juice
For 2-tablespoons sherry or bourbon, use 1 to 2-teaspoons vanilla extract
For 2-tablespoons Grand Marnier or other orange-flavored liqueur, use 2-tablespoons unsweetened orange juice concentrate.
For 1/4-cup or more of white wine, use an equal amount of white grape juice.
