A standard cake recipe with healthful ingredients of pineapple, grated carrots and coconut and a cream cheese icing for a Christmas Carrot Cake.

Christmas Carrot Cake


2 cups flour
2 cups sugar
2 teaspoons baking powder
2 teaspoons cinnamon
2 teaspoons baking soda
2 teaspoons salt
1 cup corn oil
4 eggs
2 teaspoons vanilla
1 flat can pineapple, drained
2 cups grated carrots
1 cup coconut

Recipe Directions

Sift all dry ingredients (first 6). Then add the corn oil, eggs and vanilla.

Gently stir in pineapple (drained), grated carrots and coconut.

Pour into a greased, floured 9 x 13-inch baking pan. Bake at 350 degrees for 55 to 60 minutes.

For Icing Mix

8 oz. package reduced fat cream cheese
1 box powdered sugar
1 stick margarine
1 teaspoon vanilla

Mix icing ingredients and frost cooled cake.
