Coconut Drops are so simple but such a treat! Just coconut and cream cheese mixed together and formed into candies. For a festive touch, color the coconut with food coloring before you mix with cream cheese. Place in small paper cups in a gift box of sugarless candies for someone you love.

Coconut Drops


1 cup light cream cheese
2 cups shredded coconut

Recipe Directions

Mix cream cheese and coconut.

Drop by 1 inch diameter spoonfuls onto waxed paper.

Variation: Pecan Ball Cookies

6 tablespoons shortening
1/2 cup butter
1/4 cup powdered sugar
1 teaspoon vanilla
1 tablespoon milk
2 cups unbleached flour
2 cups coarsely chopped pecans

Cream shortening and butter together. Add sugar and cream until light. Add vanilla and milk. Blend well. Add unsifted flour and nuts to creamed mixture and blend well. Roll lightly into small balls. Bake in 325 degree oven for about 30 minutes or until light brown. When cool, roll in powdered sugar.
