Low Fat Sugar Cookies

These Low Fat Sugar Cookies are SO good considering they are healthier and much lower in fat than the original versions. Olive oil replaces the butter, egg substitute the whole eggs.
1 cup sugar
1/3 cup vegetable oil
1 tablespoon vanilla
2 egg whites or egg substitute equivilant to 1 egg
2-1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup skim milk
Whisk together first four ingrediants.
Stir in remaining ingrediants until thoroughly mixed.
Chill dough at least 1 hour or overnight.
Roll out on floured surface to 1/8th inch thick. Cut with cookie cutters. Place on cookie sheet sprayed lightly with non-fat cooking spray and bake at 375 degrees 10 to 12 minutes or until lightly browned.
Recipe yield may vary depending on dough thickness and the cookie cutter used.
Frost with powdered sugar with milk stirred in until desired consistency and colored sugars or other decorations of choice.

An Original: Christmas Cut Out Cookies
1/2 cup shortening
1/2 cup sugar
1-3/4 cups unbleached flour
1 teaspoon vanilla
1 teaspoon baking powder
Have shortening at room temperature. Cream shortening and add sugar gradually. Add egg and vanilla. Sift flour with baking owder and add to creamed mixture. The dough should be easy to handle. If not, chill for an hour or so.
Roll dough out to 1/4-inch thickness. Cut out with cookie cutters in any variety of shapes desired. brush with white of egg and sprinkle with colored sugar. Bake 10 to 15 minutes in 375-degree oven.
