Healthy Christmas Recipe

This is an old fashioned gingerbread recipe lightened up! Spices of ginger, cinnamon and allspice with honey and molasses for sweetness.
Recipe Ingredients
2 cups unbleached white flour
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons ginger
1 teaspoon cinnamon
1 teaspoon allspice
1/4 cup honey
1/4 cup molasses
2 tablespoons canola oil
1/2 cup evaporated skim milk
2 eggs, beaten (or egg substitute equivalent)
1/2 cup boiling water
Recipe Directions
Preheat the oven to 350 degrees. Combine the dry ingredients in a medium bowl.
Combine the remaining ingredients in a large bowl. Add the flour mixture slowly to the wet ingredients, mixing well after each addition.
Pour into an 8 x 8-inch nonstick pan and bake for 35 to 45 minutes. Serve warm.
