Jolly Bunny Cake
Happy Healthy Holidays!
Turn this fun cake into a centerpiece. Color coconut flakes with green food coloring and arrange around the base of the cake to resemble grass. Then scatter additional jellybeans on top of the coconut grass.
1 package(about 18 ounces) white or yellow cake mix (with pudding in the mix)
3-3/4 cups (10-ounce package) sweetened coconut flakes, *divided
1 can (about 13 ounces) ready-to-spread soft whipped vanilla frosting
Red licorice sticks (for whiskers)
Heat oven and prepare two 9-inch round baking pans as directed on cake mix package. Prepare cake batter with whole eggs, water and oil as directed on package; stir in 1/2-cup coconut. Divide batter evenly amoung prepared pans; bake and cool as directed.
Place one whole layer on serving tray. forming head.
When cooled, cut the other round in half and shape the halves into the "ears". Frost all pieces with white frosting and sprinkle with remaining coconut. Decorate with jellybeans, licorice for "whiskers" and jellybeans for eyebrows, etc., as desired.
Note: The bow-tie shown on the picture was made from yet another 9-inch layer of a cake but is not necessary. The decorations consist of coconut colored pink and jelly beans sprinkled atop. One could use white frosting colored pink as well.
Recipe makes one cake.
