Diet Easter Fudge

Fat free evaporated milk keeps this Diet Easter Fudge tender and moist while also keeping down fat and calories. Sugar free pudding helps keep a fudge like consistency.
1 square unsweetened chocolate
1/4 cup fat free evaporated milk
1/2 teaspoon vanilla
1 teaspoon artificial liquid sweetener
1 package chocolate sugar free pudding mix
8 teaspoons finely chopped nuts
Melt chocolate in top of double boiler over boiling water. Add evaporated milk and mix. Cook 2 to 3 minutes, then add vanilla and sweetener.
Spread on small foil pie pan or plate. Chill thoroughly and cut into 8 pieces. Form into egg shaped balls and then roll lightly in pudding powder or chopped nuts.
Yield: 8 servings
