Cinnamon Oatmeal Muffins

Can't beat cinnamon and oatmeal and its doubly satisfying in these muffins with brown sugar and orange zest for a tasty citrus surprise.
3/4 cup skim or 2 percent milk
1 cup oatmeal, uncooked
1/2 cup vegetable oil
2 egg whites
1/2 cup brown sugar
1/2 teaspoon cinnamon
3 teaspoons baking powder
1 cup flour
1 tablespoon grated orange zest
Preheat oven to 400 degrees. Line 12 muffin cups with paper liners. Peel and chop bits of apple (optional).
Combine and mix milk and oatmeal.
Add oil and egg whites, sugar and spice and zest. Stir until blended.
Combine flour and baking powder, add to mixture, along with apple bits (if using) and stir just until blended.
Bake 15 to 18 minutes.
Recipe Yields: 12 servings Cinnamon Oatmeal Muffins.
