Mushroom muffins? Yes! Packed with healthful ingredients such as whole wheat flour, onions, Cheddar cheese and spiced nice with thyme, parsley.

Recipe Ingredients

3/4 cup mushrooms; chopped
1 cup all purpose flour
3/4 cup whole wheat flour
1/3 cup onions; chopped small
1 tablespoon sugar
1/4 cup walnuts; chopped small
1/4 teaspoon salt
1/8 teaspoon pepper
2 teaspoons baking powder
1/2 teaspoon ground thyme
1/2 cup Cheddar cheese; grated
1/2 teaspoon dried parsley
3/4 cup milk
1/2 teaspoon salt
1/3 cup cooking oil
1 tablespoon butter
1 egg; beaten

Recipe Directions

Mushrooms Melt butter in small skillet.

Add mushrooms and onions. Saute until onion is golden.

Add the mushroom mixture.

Stir just until the dry ingredients are moist. Serve warm.

Bake at 350 degrees for 25 minutes or until golden.

Whole Grain Muffins Recipe Yields: 12 servings Mushroom Muffins.
