Whole Grain Recipe

These breakfast muffins are made with yogurt, orange juice concentrate, soaked raisins and spiced with cinnamon. Goes great with your morning coffee.

Recipe Ingredients

1/2 cup lowfat yogurt
2 egg whites, lightly beaten
3 tablespoons orange juice concentrate
1/2 cup soaked raisins
1/2 cup rolled oats
1/2 cup flour
1/2 teaspoon ground cinnamon
1/2 teaspoon baking soda

Recipe Directions

Preheat oven to 375 degrees. Spray 6 muffin cups with non-stick cooking spray (such as Pam) and set aside (or line with paper baking cups lightly sprayed with non-stick cooking spray).

Combine yogurt, egg whites, orange juice concentrate, raisins and oatmeal. Let stand 10 minutes.

Combine flour, cinnamon and baking soda. Add to yogurt mixture and immediately spoon into muffin cups.

Bake until golden brown and a toothpick inserted in center comes out clean, about 25 minutes.
