Bacon Corn Bread Muffins
Whole Grain Recipe
This recipe makes tender and delicious Bacon Corn Bread Muffins with sweet milk and diced bacon.
1 cup cornmeal
1 cup white flour
3 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
1 egg, well beaten
1 cup sweet milk
1/4 cup diced bacon
Sift flour, measure, and sift with baking powder and salt. Add cornmeal.
Combine egg, milk, and bacon which has been crisped.
Add dry ingredients. Fill well-oiled muffin tins 2/3 full.
Bake in hot oven (450 degrees) 15 minutes.
Cornmeal is relatively low in fat (about 2 to 3 grams per 100 grams of cornmeal). Since most cornmeal has been enriched with iron and B Complex Vitamins, cornmeal is also a great source of energy.
