Amaranth Date Nut Bread Grain Recipe
Ingredients:
1 cup chopped dates
1/2 cup amaranth
1 cup boiling water
2 eggs
1/2 cup honey
1/4 cup butter, melted
2 cups whole wheat flour
2 teaspoons baking powder
1 cup chopped pecans
1 teaspoon vanilla extract

Directions:
Soak dates and amaranth in boiling water.
Beat eggs well, add honey and butter; beat well. Stir in all remaining ingredients mixing well.
Pour into an oiled loaf pan.
Bake at 350 degrees for 1 hour and 15 minutes.
Yields: 6 Servings
