Ice Cream Muffins
Whole Grain Recipe
These Ice Cream Muffins actually use real ice cream melted in the recipe! Talk about a creamy ice cream flavor! Add cinnamon and chocolate or peanut butter chips. These are a treat.
These may not top the charts in healthy, but they're so unique we couldn't resist adding them to the collection for a special treat!
1-1/2 cups all purpose flour
1-1/2 tablespoons baking powder
3/4 teaspoon salt
2 cups vanilla ice cream (or flavored, if you prefer), melted
3/4 cup cinnamon, chocolate or peanut butter chips, or combination
Preheated oven to 350 degrees.
Measure dry ingredients into a medium bowl; stir in ice cream just until flour is moistened. Stir in chips. Spray muffin cups with non-stick spray and fill cups 3/4 full.
Bake for 20 minutes or until golden brown.
Yield: 10 muffins
