Cream of Wheat Pancakes

You get to cheat a bit on this one by using pancake mix then adding cream of wheat, milk, eggs or egg substitute.

Recipe Ingredients

3 cups pancake mix
3 cups Cream of Wheat
4 cups 1-percent milk
6 eggs or egg substitute equivalent
12 teaspoons vegetable oil
Vegetable cooking spray

Recipe Directions

Spray griddle with cooking spray.

In bowl, combine pancake mix and cereal. Blend milk, egg and vegetable oil; stir into cereal mixture.

Pour scant 1/4 cup batter onto hot griddle for each pancake. Cook until bubbly, turn and cook until golden brown. Repeat with remaining batter.

NOTES : If desired top with fruit, and serve topped with yogurt mixed with honey: 2 (8 ounce) containers nonfat yogurt (any flavor) mixed with 2 tablespoons honey.

Whole Grain Pancakes Recipe Yields: 6 Servings Cream of Wheat Pancakes.
