Alabama Corn Bread
Whole Grain Recipe
Known as Alabama corn bread because it stems from deep Southern roots! This cornbread is so moist, you may not even need nor want to butter it.
1 can (8-3/4 ounce) cream style corn
1 cup commercial sour cream
1/2 cup vegetable oil
1 cup self rising cornmeal
2 teaspoons baking powder
- sour cream
Combine cornmeal and baking powder; stir into corn mixture.
Pour into greased 10 inch iron skillet.
Bake at 400 degrees for 30 minutes or until done.
On its own, cornmeal is relatively low in fat (about 2 to 3 grams per 100 grams of cornmeal). And, since most cornmeal has been enriched with iron and B Complex Vitamins, cornmeal is also a great source of energy!
