Tender plump juicy blueberries in these light pancakes. Yogurt helps keep the fat down and adds nutritious factors such as added calcium

Recipe Ingredients

1-3/4 cups flour
1-1/2 teaspoons sugar
1/4 teaspoon baking powder
1 teaspoon baking soda
3 egg yolks, beaten
3 egg whites, beaten stiff
3 tablespoons margarine or butter, melted
2-1/4 cups yogurt
1 cup blueberries

Recipe Directions

Sift dry ingredients.

Blend together egg yolks and yogurt, mix well; add to dry ingredients.

Add margarine and mix together lightly. Add blueberries. Fold in egg whites.

Bake on hot griddle.

Recipe Note

You can use plain non-fat yogurt, or really pack in blueberry flavor with blueberry yogurt.
