Whole Grain Recipe
What could go better with a fresh hot cup of coffee than tender moist Coffee Muffins? Very low in fat with yogurt, healthful with whole wheat flour.
1 cup very strong cold black coffee
1 cup sugar
1 cup yogurt
1-1/2 cups flour
1 cup whole wheat flour
2 teaspoons baking powder
Preheat oven to 400 degrees.
Line muffin cups with paper liners.
Put the first four ingredients into a bowl; mix well.
Add the dry mix to the wet mix until just combined.
Spoon into pans and bake for 15 to 20 minutes.
Recipe Yields: 15 servings Coffee Muffins.
