A mixture of all purpose flour and whole wheat flour packs nutrition into this delicious cranberry bread packed with cranberries and cranberry juice! Plump, sweet raisins give it the finishing touch.

Cranberries in Whole Grain Cranberry Bread

Recipe Ingredients

1 cup whole wheat flour
1 cup all purpose flour
1 cup sugar
1-1/2 teaspoons baking powder
1 teaspoon salt
3/4 cup butter; melted
1 egg; beaten
1 teaspoon orange peel; grated
3/4 cup cranberry juice
1-1/2 cup raisins
1-1/2 cup cranberries; fresh, pulped
1/2 cup chopped nuts (optional)

Recipe Directions

Blend all ingredients except cranberries by hand. Stir gently; don't beat. This will ensure a soft tender bread. Over mixing can make this bread tough.

Gently fold in cranberries.

Note: Mixture will be lumpy; this is normal.

Pour dough into a greased loaf pan.

Bake in a preheated 350 degree oven for 1 hour, 15 minutes, or until lightly browned on top.
