Breadcrumbs

It is fun and easy to make your own bread crumbs. Place a layer of fresh, sliced bread on a baking sheet, brush lightly with butter and sprinkle with grated Parmesan cheese. Bake at 300-degrees until lightly browned and completely dry. Cool completely and break into pieces. Pulse in a food processor or place into a sturdy plastic bag and crush gently with a rolling pin.

Making your own Seasoned Bread Crumbs

  • It's easy to make your own seasoned bread crumbs for use as a crisp casserole topping, a coating for chicken or fish or a crust for vegetable gratin's. Use completely dry or stale bread, tear it into small pieces and grind it into crumbs in a food processor. If your bread is still somewhat soft, cut into thin slices and place in a 250 degrees oven until completely dry. Season the dried bread by simply spraying with cooking spray and coating with herbs.

Short of Bread Crumbs? Stretch what you've got by using your blender to grind up crackers, unsweetened breakfast cereal or potato chips. Cornmeal and wheat germ will also work in a pinch.

Fix up everyday vegetables with a sprinkling of buttered bread crumbs or shredded or grated reduced-fat cheese.
