Dairy-free, Low-fat Pumpkin Pie
Here is a wonderfully healthy pumpkin pie recipe using tofu as a main ingredient.
Ingredients:
1-1/2 package Light Tofu Firm (for extra flavor, look for extra-firm)
2 cups canned or cooked pumpkin
2/3 cup honey
1 teaspoon vanilla
1 tablespoon pumpkin pie spice OR Next four ingredients
1-1/2 teaspoon ground cinnamon
3/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 unbaked 9" pastry crust
Directions:
Preheat oven to 400-degrees.
Blend light tofu firm in a food processor or blender until creamy smooth.
Add pumpkin, honey, vanilla and spices; blend well.
Pour into a 9-inch unbaked deep dish pie shell.
Bake approximately one hour or until a toothpick inserted in the center comes out almost clean. Cool and Serve.
Recipe makes eight servings.
