Grilling Summer Squash
You can grill your summer squash directly over hot coals - a great idea for your next backyard barbecue.
- Slice the squash diagonally into one-half inch thick slices.
- Brush the squash with olive oil and place in a grill basket or threaded on metal skewers. Grill until just tender - depending on size of slices, should take between 2 to 3 minutes per side.
- Serve your grilled squash warm or at room temperature.
Grilled summer squash are good sprinkled with lemon juice, fresh basil, and red pepper flakes. It goes very well with grilled chicken or steak.
