Toasting Pine Nuts
Toasting pine nuts releases their oils and heightens their flavor.
Toasted pine nuts are real treat! They are very tasty and nutritious - use them anywhere you would use a savory nut. You can eat them just as they are, or add to salads, make them into pesto with basil, parmesan, garlic, and olive oil. They are good in couscous for additional flavor and texture. You can also use them in Italian cookies, etc. Also great stirred into rice dishes (especially pilafs).
Toasting Pine Nuts
- Place the pine nuts in a roasting pan in a single layer.
- Place in a 400-degree oven and toss several times until nuts are light golden brown, about five to six minutes.
- Sprinkle with salt if desired.
Noteable Notes: Do not buy the Pine Nuts from China. They are chemically treated with an anti-fungal and God knows what else to increase their shelf life. The nuts from Italy or Spain are far more flavorful, much higher quality, and are not rancid when you buy them. Also, store them in the refrigerator or freezer, as the oils tend to go rancid quickly.
