Sweet Condensed Milk
Sweetened condensed milk is great for baking and creating confectionary treats. It also provides sweetness to a variety of beverages. It is a very sweet product.
Sweetened condensed milk is named as such due to the process of sugar added as a preservative for milk. In the late 1800s, keeping milk for as little as three days was almost impossible. Upon a transatlantic ship voyage, when the cows became too seasick to milk, one Gail Bordon discovered he could stabalize milk for three days by adding sugar.
Simply heat sweetened condensed milk and you will have caramel!
Storing Sweetened Condensed Milk
When properly stored, an unopened can can last 1 year. After opening, two to three weeks.
While the professional way to make sweetened condensed milk uses a vacuum process to remove water, the following recipe is great in a pinch or if you just prefer to make your own instead of opening an old tin can. The following recipe makes the equivalent of 1 store bought can.
Home Made Sweetened Condensed Milk Recipe
1 cup powdered milk
1/3 cup hot water
2/3 cup white sugar
2 tablespoons softened butter
Place all ingredients in a blender and process until the sugar is dissolved. Refrigerate until use. Will last two to three weeks in the refrigerator.
