Shiitake Mushrooms with Oats

Dried shiitake mushrooms cooked in bouillon then add onion, celery, garlic, chili powder, oregano, cayenne, cooked oat groats and cilantro.

Recipe Ingredients

2 cups dried shiitake mushrooms
2 cups boiling bouillon
1 onion, chopped
2 stalks celery, chopped
2 cloves garlic, minced
1 teaspoon mild chili powder
1 teaspoon oregano
Pinch cayenne pepper, or to taste
2 cups cooked oat groats or other whole grains of your choice
1/4 cup chopped cilantro

Recipe Directions

shiitake mushrooms Cook macaroni, drain.

While macaroni cooks, bring tomatoes, beans, and spices to a boil over medium heat.

Add macaroni, cover and simmer for about 10 minutes. Pour into a serving dish and sprinkle with cheese and serve.
