Mexican Salad
Low Fat High Fiber Recipe

Ingredients:
1 small head lettuce
1, 15-ounce can Mexi-beans, drained
1-2 cup chopped vegetables (carrots, celery, broccoli)
3/4 cup low-fat cheese
1/2 bottle fat-free Catalina salad dressing
4 ounces No-oil tortilla chips

Directions:
Make a salad with all but dressing and chips.

Right before serving toss in dressing and tortilla chips.

Recipe makes 8 high fiber servings Mexican Salad.
