High Fiber Recipe

If you like bananas, surely you enjoy banana bread! Try this version reduced in fat, packed with fiber. Uses whole wheat pastry flour in place of all purpose and egg substitute for cutting fat.

Recipe Ingredients

1/2 cups sugar
1/2 cup egg substitute
2 cups mashed bananas (about 5)
2 cups whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon

Recipe Directions

With mixer, beat together sugar, eggs, and bananas.

Add dry ingredients; mix well. Pour into loaf pan sprayed with cooking spray.

Bake at 350 degrees for 45 minutes.
