Southwestern Beef Salad High Fiber Recipe
Ingredients:
1 pound lean ground beef
1/2 cup onions, chopped
1 tablespoon chili powder
2 teaspoons dried oregano
1/2 teaspoon ground cumin
1 cup canned red kidney beans, drained and rinsed
1 pound canned chickpeas, drained and rinsed
1 medium tomato, diced
2 cups lettuce
1/2 cup cheddar cheese

Directions:
Cook ground beef and onion in a skillet over medium-high heat until beef is no longer pink, about 10 to 12 minutes. Drain. Stir in chili powder, oregano, and cumin. Cook for 1 minute.
Mix in beans, chickpeas, and tomato. Portion lettuce onto servings plates.
Top with grated cheese. Then top with beef mixture.
Recipe makes 4 high fiber servings, approximately 1-cup each.
