Southwestern Rice Skillet High Fiber Recipe
Ingredients:
3 cups cooked rice
1 pound american mixtures santa fe
1 pound red kidney beans, rinsed and drained
1-3/4 cups Mexican style stewed tomatoes, cut up
1/2 cup shredded cheddar cheese

Directions:
Combine all ingredients, except cheese, in a heavy nonstick pan over medium high heat. Bring to a boil.
Reduce heat to low and simmer 5 minutes, or until vegetables are heated through, stirring occasionally. Remove from heat and sprinkle with cheese.
Cover and let stand until cheese is melted.
Recipe makes 8 high fiber servings.
