IRISH POTATO CANDY
If the idea of potato candy does not appeal to you, take heart! There are several recipes here that do not include real potatoes! On the other hand, if you do enjoy the candy made with the "real thing", there are also original Irish candies with the potatoes included! Enjoy - whichever way you prefer these Irish confections.

Dandy Irish Potato Candy

This recipe does not include coconut as my family prefers it that way but it is very good just the same!
Ingredients:
1-1/2 cups white sugar
1 tablespoon butter
1/2 cup evaporated milk
1/8 teaspoon cream of tartar
1/4 teaspoon salt
1 teaspoon vanilla extract
2 tablespoons ground cinnamon
Directions:
In a saucepan over medium heat, combine the sugar, butter, evaporated milk, cream of tartar and salt. Mix well and bring to a boil. Cook to the soft ball stage at 234-degrees (115 degrees C). A few drops will form a soft ball when dropped into cold water. Remove from heat and cool to room temperature. Add vanilla and beat until creamy and stiff. Roll into balls and shape like little potatoes. Roll each ball in cinnamon to coat, then press in pieces of chopped nuts to look like eyes. You can also dust with cocoa to simulate dirt.
Recipe makes two dozen candies.

Granny's Irish Potato Candy
This Irish candy is a cute little confection that looks just like little potatoes. This kind does not contain potatoes; they are made using cream cheese and coconut.

Ingredients:
1/4 cup butter, softened
4 ounces (1/2 of an 8-ounce package) cream cheese
1 teaspoon vanilla extract
4 cups confectioners' sugar
2-1/2 cups flaked coconut
1 tablespoon ground cinnamon
Directions:
In a medium bowl, beat the butter and cream cheese together until smooth. Add the vanilla and confectioners' sugar; beat until smooth. Using your hands if necessary, mix in the coconut. Roll into balls or potato shapes, and roll in the cinnamon. Place onto a cookie sheet and chill to set. If desired, roll potatoes in cinnamon again for darker color.
Recipe makes five dozen candies.

Irish Potato Candy I
This Irish candy is a cute little confection that looks just like little potatoes. This kind does not contain potatoes; they are made using cream cheese and coconut.

Ingredients:
1 tablespoon mashed potatoes
2-1/4 cups confectioners' sugar
One 12 ounce jar peanut butter
Directions:
Placed mashed potatoes in a mixer bowl. Add confectioners' sugar one cup at a time, beating well after each addition. Spread into greased 10 x 15 inch pan. Spread peanut butter over top. Roll as for a jelly roll.
Cut into slices.
Recipe makes 16 candies.

Irish Potato Candy II
This Irish candy is a cute little confection that looks just like little potatoes. This kind does not contain potatoes; they are made using cream cheese and coconut.

Ingredients:
One small size Irish potato
Dash of salt
1 box powdered sugar
1 cup pecans, chopped
One small jar peanut butter
Directions:
Boil potato with peeling on until done. Peel and mash potato. Add dash of salt and powdered sugar, a little at a time until it forms a dough.
Roll out like pie crust until about 1/2-inch thick. Spread peanut butter on top of dough. Sprinkle chopped pecans over peanut butter.
Roll up dough and chill in freezer for a few minutes until firm. Remove from freezer, slice and serve.

Irish Potato Candy III
This Irish candy is a cute little confection that looks just like little potatoes. This kind does not contain potatoes; they are made using cream cheese and coconut.

Ingredients:
4 ounces softened cream cheese
1/4-pound butter, softened
1-1/2 boxes confectioners' sugar
Cinnamon
Directions:
Blend cream cheese and butter together well.
Stir in confectioner's sugar.
Make into bite size balls and roll thoroughly in cinnamon.
