IRISH BROWN BREADS


Another classic Irish recipe, you can make this bread a day in advance and stored in an airtight container. Many enjoy putting smoked salmon spread over a slice of this bread. The recipe for that will follow the bread recipe.

This is actually a very healthy recipe without many changes to reduce fat content.



Irish Brown Bread



Ingredients:
15 ounces seedless raisins
¼ cup butter
Egg substitute equivalent to three eggs
3-1/2 cups all-purpose flour
1 cup sugar
2 teaspoons baking soda
½ teaspoon salt
½ teaspoon allspice
½ teaspoon nutmeg
1-1/2 teaspoon cinnamon

Directions:
In saucepan, place raisins then cover with water. Gently boil for 15 minutes. Drain, reserve 1 cup cooked liquid. In large bowl, add raisins and reserved cooking liquid. Add butter and cool. Mix in egg substitute.

Sift all remaining ingredients. Stir in to raisin mixture. Bake in a greased, 10- inch, tube pan at 350-degrees for one hour. Turn out on rack to cool.

Recipe makes six servings.



Irish Brown Soda Bread

This authentic Irish recipe contains currants or caraway seeds and is the simplest recipe ever. Because it must only be handled very lightly, it cannot be made in a bread machine.




Ingredients:
4 cups whole wheat flour
1 cup bread flour
1/3 cup rolled oats
1 teaspoon baking soda
1 teaspoon salt
2 1/2 cups buttermilk
Directions:
Preheat oven to 425-degrees (220 degrees C). Lightly grease two baking sheets.

In a large bowl, stir together whole wheat flour, white flour, rolled oats, baking soda and salt. Gently mix in the buttermilk until a soft dough is formed. Knead very lightly. Divide dough into 4 pieces; form into rounded flat loaves. Mark each loaf with an 'X' and place on prepared baking sheets.

Bake in preheated oven until golden brown, about 30 to 45 minutes.

Recipe makes four, 10-ounce loaves.
