Root Beer Christmas Cake
This is a true treat that the whole family will flip over. If you enjoy nuts, try adding walnuts or pecans to the topping for extra pleasure.
Ingredients:
2 cups plain flour
2 cups sugar
1 cup root beer
1/4 cup olive oil
1/2 cup milk
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon salt
2 eggs
1.5 cups miniature marshmallows
Directions:
Mix 2-cups flour with two cups of sugar. In a saucepan, combine 1-cup root beer and olive oil, bring to a boil and add to the flour mixture. Stir well. Add in milk, baking soda, vanilla, salt and two eggs. Blend. Stir in 1-1/2 cups of miniature marshmallows to the mixture. Bake in a 9x12 pan at 325-degrees for thirty minutes. For a great topping, use one cube of margarine and 1/3-cup of root beer, bring to a boil and add one box of confectioner's sugar. Mix and pour over cake while hot.
