Brown Sugar Meringues with Rhubarb Sauce


Ingredients:
1/2 cup egg whites (about four large eggs)
Pinch of salt
1 cup brown sugar

Directions
Preheat the oven to 300-degrees. Line two cookie sheets with parchment or wax paper.

With an electric mixer, beat the egg whites and salt on high speed until soft peaks form.

Continue mixing on high speed while adding 1/2-cup of the sugar. Add the remaining sugar by the tablespoon. Beat for another one to two minutes, until the mixture is stiff and shiny.

Drop by the spoonful, onto the cookie sheets. Flatten each cookie slightly with the back of a spoon.

Bake until golden brown, about 30 minutes. Let cool.

This recipe makes 36 cookies.

Rhubarb Sauce


Ingredients:
1-1/2 cups sliced, 1/4" thick rhubarb
1/2 cup sugar
1/4 cup water

Place all the ingredients in a pot. Cook, uncovered, over medium heat until the rhubarb is completely soft and falling apart.

Serve warm with pork, duck, turkey or Cornish hens.

Serving Size 2-tablespoons.
