Roasted Vegetable Pizza
Imagine a crusty pizza, redolent with delicate olive oil
and dressed with roasted vegetables. Our garden-style Roasted
Vegetable Pizza features fresh asparagus, mushrooms and
green onions
Ingredients:
One large pre-baked pizza crust
Nonstick vegetable spray
2 tablespoons olive oil
Twelve whole black olives
Four mushrooms, sliced
Four asparagus spears, trimmed, diagonally sliced 1/2-inch thick
Two green onions, chopped
1/2 teaspoon Italian seasoning blend
1/4 teaspoon salt
Directions:
Preheat oven to 400-degrees.
Coat a baking sheet or pizza pan with nonstick vegetable
spray. Place pizza crust on sheet pan. Brush entire
surface of pizza crust with olive oil.
Arrange olives, mushrooms, asparagus and green onions
evenly over pizza surface. Sprinkle with Italian seasoning
and salt.
Bake pizza for 10 minutes or until crust is a light golden
brown and vegetables are cooked. Cut into 4 even portions
and serve.
Recipe makes four servings.
