Lowfat Fudgy Brownies
Intense chocolate flavor with chopped prunes for
moisture and texture.
Ingredients:
4 ounces baking chocolate, chopped
1 cup sugar
3 egg whites, beaten
1/2 cup finely chopped and pitted prunes
1 teaspoon salt
1 teaspoon vanilla
1/2 cup flour
1/4 cup chopped walnuts
Directions:
Preheat oven to 350°F. Grease and flour a 8x8x2-inch
pan; set aside.
In a double boiler, melt chocolate over low heat; stir
occasionally until chocolate is melted. Remove from heat
and set aside.
Beat sugar and egg whites in a medium mixing bowl. Mix in
prunes, salt and vanilla until thoroughly combined. Stir
in flour and melted chocolate. Spread into prepared pan
and sprinkle top with walnuts.
Bake until toothpick inserted 2 inches from the edge comes
out clean, about 25 minutes. Center may still look a little
soft. Cool in pan. Refrigerate at least an hour before
cutting into squares.
Recipe makes 16 servings.
