Mocha Ice Cream

This grown-up taste appeals to those who do not like cloying desserts.

Ingredients:
4 cups chocolate low-fat ice cream
1/4 cup Kahlua (coffee-flavored liqueur)
1 tablespoon instant coffee granules
2 ounces bittersweet chocolate, finely chopped

Directions:
Place a large bowl in freezer. Let ice cream stand at room temperature 45 minutes or until softened.

Combine liqueur and coffee granules in a small bowl. Microwave at high for 30 seconds; stir until coffee dissolves. Cool.

With a rubber spatula or stand mixer, combine softened ice cream, coffee mixture and chopped chocolate in chilled bowl. Cover and freeze to desired consistency.

Recipe makes eight servings.
