Several explanations compete, but a favorite harks back to Evanston, Illinois, where - in a simpler time - officials declared ice cream sodas off-limits on Sunday. Who knows why? Maybe because the soda fountain was just a little too much fun for the Sabbath, or maybe because of soda water's association with alcohol. Whatever the reason, enterprising soda fountain operators took soda out of the mix and served ice cream with just the syrup. No bubbles, no problem. To prevent the appearance of sacrilege, they tacked on the "ae" ending.
