Mushroom and Cheese Omelet

Ingredients:
Two eggs, beaten
1 tablespoon milk
2 tablespoons grated mozzarella or cheddar cheese
3 tablespoons finely sliced mushrooms sautéed in butter
Salt and pepper to taste
1 teaspoon finely chopped chives
1 teaspoon chopped parsley
1 teaspoon grated Parmesan

Directions:
Combine eggs, milk, cheese, mushrooms, salt, and pepper in deep mixing bowl and whisk. Melt 2-tablespoons butter or oil in 9-inch shallow skillet over moderate heat. Pour egg mixture evenly into warm skillet. Cook slowly, tilting pan to run liquid up the sides and allowing the center to cook. Fold in half when top begins to firm and bottom is lightly browned. Sprinkle with Parmesan, then chives and parsley. Serve immediately.
