Western Three Egg Omelet
Ingredients:
In a small bowl whisk together eggs, milk, spice mix
and salt. Preheat broiler, with rack low enough to
accommodate a 6 inch flame proof non-stick skillet.
In skillet heat oil over medium heat, sauté onions,
bell peppers and sliced mushrooms. Pour in egg mix
pull in sides of omelet toward the center as edges
set, sprinkle on the cheese, place pan under the
broiler to cook the top, remove, fold in half and plate
to eat.
Serve with country fries or hash browns and toast or
muffins. Serve while still hot.

1/4 cup grated Jalapeno Jack cheese
1 teaspoon BBQ spice
2 tablespoons chopped green onions
1/4 cup chopped bell peppers
1/4 cup sliced fresh mushrooms
1 tablespoon milk
1 teaspoon virgin olive oil
1/4 teaspoon salt
